Sweet Plantain Egg Sandwich

So I am starting this blog off with a very simple recipe taking it all the way back to basics. It’s a big deal for Jamaican Parents to prepare breakfast for their kids before sending them off to school. As a Jamaican kid growing up, I could always look forward to a well-prepared breakfast before I embark upon my journey to education.
I was a skinny kid, picky and I didn’t eat much. So my mom would always prepare the meals she absolutely know I would eat.
Plantains! Oh my sweet Plantains! I’ll have those all day, every day. And to have them combined in a sandwich with eggs, I could only think that God himself had whispered in my mom’s ear telling her to married those ingredients in one sandwich that morning when I first tasted it. I have pretty epic imaginations, and that is how I imagined it went down in the kitchen that day.
Presently, I still enjoy making and having this sandwich for breakfast. Every single trip I make to do groceries, I will never leave without picking up a handful of plantains. What can I say, they are very versatile and you can almost pair them with anything. I’ve got mad love for plantains, and making them in this sandwich is one of my favorite ways to have them.
Making this recipe, I always start on the plantains first by removing the skin and slicing it diagonally. Be sure to use ripe plantain in this recipe to get the perfect contrast of sweetness when it is paired with the egg within the sandwich. I will then set them to fry by placing them in a skillet containing oil. They will take about four minutes on each side. You will know they are ready when they are soft and have a charred and caramelized appearance. Now, don’t just stand there watching those plantains being fried. If you can multitask, then go ahead and start building your sandwich. Grab two slices of bread and set them to toast. It all comes down to your preference of what kind of bread you use and whether you want to toast them or not. I personally prefer toasting my bread to get a little crunch in. Okay! Spread one side of each slice of bread with butter or mayonnaise, whichever you so choose. By this time, the plantains should be ready, take them out and layer them evenly on top of the bread you just buttered. We got only the egg left to do, and we ain’t wasting any time here. Crack the egg and add it to the same skillet that has the remainder of oil from the fried plantains. We are almost there! Add a pinch of salt and pepper, then remove the eggs when it’s done to your liking. Place it on top of the layered plantains and add the other slice of bread on top. Guess what? We are done.
The great thing is, it is a very simple recipe and it is really easy to make. Before you know it, you will be done in no time. It’s a perfect blend of sweet and salt with a little crunch from your toast. Take a bite and you will get the idea. Sweet Plantain Egg Sandwich

- 1 large egg
- 2 slices bread (white, wheat)
- 2 tspn butter or mayonnaise (optional)
- ½ medium sized ripe plantain
Instructions
- Pour about 1 tablespoon of oil in a skillet over medium heat
- Peel and thinly slice the plantain diagonally
- Place the plantain slices in the skillet when oil is heated, frying them up for about 4 minutes on each side. They should be done when they are soft and have a charred and caramelized appearance.
- Let’s multitask! While the plantains are being fried, toast the bread and spread one side of each slice with butter or mayonnaise depending on your preference. It’s yummy either way!
- Remove plantains from the skillet and placed them evenly on top of the bread you just buttered. Fun tip: If there are leftover plantains, use the remainder to garnish your plate and enjoy them after you have devoured your sandwich.
- Let’s get cracking! (literally). Crack the egg and add it to the same skillet that has the remainder of oil from the plantains you just fried. Add a pinch of salt and pepper. Remove the egg whenever you are ready. I like mine well done.
- Place the egg on top of the layered plantains.
- Add the other slice of bread on top (the buttered side facing inside) and we’re all done!
