I am going bananas over this recipe! I don’t know if it’s all that banana that is included, but it is just yum! Also, it’s the mere fact that you don’t have to go out of your way to buy pancake mix just to make pancakes. You can absolutely make it from scratch with simple ingredients you have on hand, with the expectation that it will come out just as good or even better.

I can tell you this, it is the best of both worlds. You’re having breakfast that is enticing and is the favorite of many, and you’re having it the healthy way. These days, it’s all about healthy living which entails eating healthy. So why not switch it up a bit and toss in some healthy stuff into your very own homemade pancakes? Banana is my top choice as it adds a tad bit of sweetness and added flavoring.

Banana is known to be one of the most popular fruits in the world. It is rich in potassium, fiber, vitamin b6 and several other nutrients. These nutrients help to moderate blood sugar levels, support heart health and also digestion. Bananas can be eaten when they are unripe as well as when they are ripe. Unripe bananas are normally consumed by cooking them first. A person may receive different health benefits from either eating it ripe or unripe.

A fully ripe banana is yellow in color which sometimes has brown spots on the skin, and is sweet in taste. It’s now a preferred option in using it as a natural sweetener for smoothies, shakes, vegan or sugar-free cakes and so much more. And guess what? They make lovely pancakes too.
Remember I said these are healthy pancakes? The great thing about this recipe is that it does not contain flour. Along with the banana, we use oats to allow the batter to come together nicely. Any kind of oats will do just fine.

Oats are whole grains and are known for their great source of fiber. It is said to be one of the world’s healthiest grains which also contains many vitamins and minerals. It plays a major role in lowering cholesterol levels, reducing blood sugar levels, supporting heart health and many other benefits.

I have got to say the coolest part of making this recipe is by whipping it up in a blender. Ever since I started making pancakes with the use of a blender, I don’t think I ever revert to stirring it by hand. I call it the upgraded method of making pancakes. I mean, it’s way quicker and there is less mess to deal with.

 

To make this recipe… all you need is a blender, a frying pan and the ingredients. The blended mixture goes from blender to frying pan. It’s that simple! There’s less hassle, less stress and less mess. This method of making the recipe has been a real game-changer for me. I don’t think I will ever go back to the old way of doing it. It is also the fact that I can make a large batch, store the leftovers in the fridge/freezer and reheat them in the next couple of days.

You can have this recipe in as many different ways as you’d like. You can serve it plain, with any syrup of your choice, or topped with your favorite fruits or nuts. In this recipe, I chose to dress it with some fresh fruits. I used kiwis and some homemade blueberry compote.

At that point in time, I had a thought to myself… I had all that fiber going on in the cakes I might as well top it all off with some antioxidants. That’s just my soul speaking to me to create an epic balance in the meal. Let me tell you, great things happen when I listen to my soul. The combination was absolutely delicious!

Both bananas and oats, which are the main ingredients in this meal, aids in controlling weight gain and lowers the risk of heart disease. So believe me when I recommend you to try this recipe, it’s coming from my heart with your heart in mind. Go ahead!… give it a shot if you haven’t tried it as yet.

Banana Oatmeal Pancakes

Eat pancakes the healthy way. These banana oatmeal pancakes pack a lot of fiber in your diet and is a great substitute for store-bought pancake mix, with simple ingredients you already have on hand. A quick and easy recipe coming straight from your blender!

Ingredients
  

  • 1 large banana ripe
  • 2 cups rolled oats
  • 2 eggs
  • 1 cup almond milk
  • 2 tsp baking powder
  • 2 tsp ground cinnamon
  • 1 tsp vanilla extract
  • Pinch of salt
  • Olive oil (any oil of your choice) for cooking

Instructions
 

  • Add all the ingredients in a blender
  • Place a non-stick frying pan over medium heat. Glaze the surface of the pan with olive oil or spray with cooking spray
  • While the oil is heating, blend all the ingredients for about 1 to 2 minutes until smooth
  • Pour about a ¼ to ½ cup of the batter in the frying pan each time. For this step, you can use a measuring cup
  • Flip pancakes once the edges start to set, and bubbles appear on the surface of the batter. Each pancake should take just over 3 minutes to cook
  • Serve with your choice of syrup and top with your favorite fruits or nuts

Notes

You can make a larger batch  and freeze them so that you can have them again when desired
You can have them plain or with any syrup, or top them with any fresh fruits/nuts of your choice
You can use any type of oats you have on hand
For thicker pancakes, pour out batter in ½ cup increments

    These sound delicious! I love the fact that these are a creative spin on typical pancake batter since these do not contain flour. I can't wait to make these!
