Jamaican Spiced Easter Bun

Snack away on some Jamaican Spiced Easter bun or have it as a subtle dessert. This recipe is the perfect way to have buns that are bursting with authentic flavor and spices with a moist and delicious fruity finish.

Ingredients
  

DRY INGREDIENTS

  • 4 cups All purpose flour
  • 1 ½ tbsp baking powder
  • 1 tbsp cinnamon powder
  • 1 tsp nut meg
  • 1 tsp baking spice
  • ½ tsp ginger powder
  • Pinch of salt

WET INGREDIENTS

  • 3 tbsp butter
  • 1 cup sugar
  • 1 tbsp jam (any preferred flavor)
  • 1 bottle dragon stout or malt drink (equivalent to approx. 2 cups)
  • 1 tbsp vanilla
  • 1 tbsp browning/molasses
  • 2 cups soaked fruits & raisins (raisins, candied fruits, blended beetroot, cherries)
  • 1 egg

Instructions
 

  • Preheat oven to 350 F
  • Grease 2 loaf pan and set aside
  • Melt the butter and add it to a bowl along with all the other wet ingredients. Add the sugar to the wet ingredients and whisk together allowing it to dissolve.
  • In another bowl, combine all the dry ingredients
  • Add the wet ingredients gradually to the dry ingredients and mix well until everything is properly combined
  • Pour the mixture into the loaf pans. As an option, you can add some cherry pieces and raisins on the top.
  • Put buns to bake for approximately an hour or until the tester comes out clean.
  • Make a glaze by melting a tablespoon of butter combined with a tablespoon of jam and honey. Use this mixture and glaze the top of the bun
  • Your bun is now ready. Allow it to cool and have it with slices of cheese, butter or avocado.

Notes

The best way to enjoy eating this recipe is to make it as a sandwich with slices of cheese. You can also have it with butter or avocado.
You can add ¼ cup more raisins and cherries on top of the batter before setting it to bake, which gives the bun a nice fruity topping.
Fruits and raisins are soaked in red-label wine as I prefer a little kick of alcohol in the mix. You can use dry fruits instead if so desired.
You can add pureed beetroot to this recipe for a fun twist and a healthier option.
Glazing your bun is for presentation purposes and added flavoring. This step is optional
