This sandwich will give you the perfect blend of sweet and salty. Create this amazing combination of ingredients to wake those taste buds up in the morning!
Pour about 1 tablespoon of oil in a skillet over medium heat
Peel and thinly slice the plantain diagonally
Place the plantain slices in the skillet when oil is heated, frying them up for about 4 minutes on each side. They should be done when they are soft and have a charred and caramelized appearance.
Let’s multitask! While the plantains are being fried, toast the bread and spread one side of each slice with butter or mayonnaise depending on your preference. It’s yummy either way!
Remove plantains from the skillet and placed them evenly on top of the bread you just buttered. Fun tip: If there are leftover plantains, use the remainder to garnish your plate and enjoy them after you have devoured your sandwich.
Let’s get cracking! (literally). Crack the egg and add it to the same skillet that has the remainder of oil from the plantains you just fried. Add a pinch of salt and pepper. Remove the egg whenever you are ready. I like mine well done.
Place the egg on top of the layered plantains.
Add the other slice of bread on top (the buttered side facing inside) and we’re all done!

You can decide to fry a whole plantain and then garnish your plate with the leftovers.
